You're probably thinking, "green mashed potatoes, what the heck?" That's what I thought too until my curiosity got the best of me and I made them. So delicious, tasty, and yes...GREEN!
INGREDIENTS:
8 large potatoes
1 cup sour cream
1 tsp. sugar
1/4 lb. butter
2 tsp. salt
1/4 tsp. pepper
2 Tbsp. minced chives
1 pkg. frozen chopped spinach, cooked according to package directions
1 cup shredded cheddar cheese
DIRECTIONS:
1. Preheat oven to 400 F.
2. Cook and mash the potatoes.
3. Add the sour cream, sugar, butter, salt and pepper.
4. Beat until light and fluffy
5. Add a little milk for creamy consistency.
6. Add the chives and well-drained spinach and beat well.
7. Put into a casserole dish and sprinkle cheese on top.
8. Bake for 20 to 30 minutes. Refrigerate any leftovers.
